Stovetop Sunday Frittata

What’s your favourite ingredient?

You’ve guessed mine, it’s eggs. They are nutritious, low fat, and adaptable. A friend once told me if I get married, my husband could just gift me a chicken farm as a dowry. Where’s my chicken farm, Chris? Where?

Aren’t eggs versatile? They go in savoury pies and quiches, sweet cakes and custard. They can be made runny, creamy, or firm like a frittata. I haven’t found an eggy dish that I didn’t like. Plus, you can pretty much chuck eggs into any dish and have another wholesome dish. They’re glorious!

What’s a frittata?

A frittata is an Italian omelette with one spare T that I don’t always know where to put. Add any vegetable, cheese or meats and you’ll have a nutritious, quick, lazy Sunday morning brunch. Frittata is roughly translated to fried in Italian, and often baked at the end for a crusty top.

I have actually never made a baked frittata, simply because I didn’t used to have an oven-safe pan. It is so easy to make a stove-top frittata once you get the hang of the flip-the-pan-with-the-lid thing.

What’s the flip-the-pan-with-the-lid thing?

First, you need a pan with a lid. Cook the egg mixture for 15 minutes on very low heat. Once the centre is no longer runny, place the lid on. Pick the pan up and secure the lid with your dominant hand. Next, flip the pan up side down. Place the pan back on the stove top and gently, slide the frittata back onto the pan. Continue to cook on very low heat for another 5 minutes. To serve, flip it with the lid again, and gently slide it onto a plate. Your frittata is ready!

Sometimes, my frittatas don’t came on the plate in one piece.. So here are a few tips on making stove top frittatas:

  • Make sure it’s not too watery. Egg mixture with a lot of moisture doesn’t firm up very well. They tend to not retain their firmness when you flip them. Limit using vegetables with high water content eg zucchini, tomatoes, etc.
  • Lightly scrape bottom of pan. To help it cook evenly, gently scrape the pan with a wooden spatula in the first 2 minutes of cooking.
  • Size of the pan matters. Aim for 1 to 1.5 inch of frittata thickness. If your pan is too small, you might end up with an eggy mess when flipping your frittata.

Equipment

  • A non-stick frying pan with a lid

Ingredients

  • 1 tsp olive oil
  • 1 garlic clove, minced
  • 1 cup sliced mushrooms (95 g)
  • 2 red sweet mini peppers, sliced (30 g)
  • 6 eggs
  • 3 tbsp full cream milk
  • 2 tbsp mayonnaise room temperature
  • ¼ tsp salt
  • ¼ tsp coarse black pepper
  • ¼ cup mozarella cheese (30 g)
  • ½ cup leafy greens (rocket salad, baby spinach, etc)
  • 5 sundried tomatoes, roughly chopped, to serve
  • 5 whole basil leaves, to serve

Instructions

  • In a big bowl, stir mayonnaise, milk and eggs together. Mix well.  
  • Stir in salt, black pepper, sweet peppers, cheese and leafy greens.
  • Heat oil on medium heat. Fry garlic for 30 seconds. Add mushrooms and fry for 2 minutes.
  • Put heat on low and pour egg mixture into pan. Gently stir and scrape the bottom of pan with a wooden spatula for 1 minute for even cooking.
  • Put the lid on and cook on low heat for 15 minutes.
  • Take the lid off. The middle of frittata should be soft but not runny. Secure the lid back on while you flip the pan upside down. You will have your frittata on the lid. With the lid on one hand, place the pan back on heat with the other. Gently slide the frittata onto the pan. Cook on low heat for another 5 minutes, covered.
  • With the lid still on, flip the pan again. The frittata will be on the lid, right side up. Gently slide the frittata onto a plate.
  • Serve with your favourite Sunday fry-up!
