Chicken & Leek Pie

With minimal ingredients, you can still make an impressive pie, and this dish is here to prove it. Creamy chicken filling with leeks and salami, you can’t go wrong with this recipe.

Even the word pie is comforting

Pies and winter go together like coffee and cream, macaroni and cheese, and hot cocoa and marshmallows. And this household is attracted to pies like bees to honey.

I saw Nigel Slater on the telly the other day and remembered this amazing but simple recipe. With store-bought puff-pastry, I find this recipe incredibly straight-forward, no tricks up the sleeves. That way, you can spend some time getting your pastry dolled up to impress your guests. You can easily beat the look of my scored pies!

With that said, you will have 2 pots/pans, and a baking tray to wash afterwards. For pies, I would wash anything. By that I mean leave them in the sink for Chris to wash them.

Sneaky salami

Smoked salami has such a fantastic flavour, it makes me want to add it to any (appropriate) dish. Example, my smoked salami minestrone. Also, mushroom carbonara, when I’m feeling naughty. It adds that zing any dish is missing, I think! What are your thoughts on cured meats? Oh, they would be so great in quiche wouldn’t they?

The star ingredient

Of course, the star of this dish is the milk-poached chicken. For this recipe, chicken on bones were used as they have more flavour. After poaching in milk, the chicken is flaked and the bones discarded. Milk is then strained to remove the bay leaf and cooked until it reaches a thick, sauce consistency. This creamy pie filling is then cooled to minimize bubbling in the oven.

Tips

You may notice that my pie here is a little bit on the dark side. It’s because I brushed my puff pastry with only the yolk. I think i prefer a more golden colour, so I have ammended my recipe.

If you’re bored of rectangle pies, why not bake them in a cake pan? You can line a cake tin with an aluminium foil for easier transfer.

Ingredients

  • 800 g chicken thighs and legs about 4 pieces
  • Ā½ onion, chopped
  • 1 bay leaf
  • Ā½ tsp freshly ground black pepper
  • 2 cups milk enough to cover chicken in pan
  • 6 slices salami, quartered
  • 2 tbsp butter (28 g)
  • 2 leeks, sliced into Ā½ inch discs
  • 3 tbsp plain flour
  • 3 tbsp Dijon mustard
  • 2 sheets puff pastry (2 x 375g packs)
  • 1 egg, beaten, for glazing
  • 1 tbsp grated parmesan, to sprinkle on top

Instructions

  • In a large saucepan, add your chicken, black pepper, and bay leaf. Pour enough milk to cover chicken. Bring to boil and simmer for 25 minutes until the chicken is cooked.
  • Meanwhile, melt butter on medium heat in another pan. Cook onion until translucent and tip in your salami and cook for 1 minute. Add sliced leeks and cook for 4-5 minutes, until they are soften.
  • When your chicken has cooked, flake the chicken meat into your leek and salami pan. Discard chicken bones.
  • Add flour and stir. cook for two minutes then add milk through a sieve. Add Dijon mustard and constantly stir to make a thick sauce. Cook for 7-8 minutes. When it is thick enough, it will coats the back of a spoon. Turn the heat off and let cool.
  • Pre-heat the oven to 200Ā°C/400F/Gas 6.
  • Roll out your puff pastry sheets to a rectangular shape. Lay the filling on one sheet, leaving 1 inch of border bare. Cover the pie filling with the second sheet and crimp the edges.
  • Brush your pie with a beaten egg and sprinkle grated Parmesan on top. Bake in the oven for 35 to 45 minutes until golden.
