Aubergine Curry

When you have all the right spices ready in your kitchen, its easy to whip up something good like this. Cut vegetables, chopped tomatoes and coconut milk, and you’ll have yourself a light but full bodied-meal.

Coconut cream chronicle

I struggle to finish a whole can of coconut milk whenever I cook. It’s just the two of us most of the time and I love cooking fresh. It’ll just sit in the fridge, forgotten.. So back in Aberdeen I keep S&P coconut milk powder handy in the kitchen. It’s not the best fresh coconut milk substitute, but it does the job and keeps our wastage to a minimum. It’s super convenient; you just prepare whatever portion you need and the powder will keep for a couple of months at least. Also, you can make it as creamy/light as you need. It’s fantastic. Except that I couldn’t find it anywhere in Glasgow..

We hunted for coconut milk powder everytime we see a supermarket. Went to Morrisons and found this wonderful coconut cream block! Why it’s genius:

  • Pop a small piece straight into your pan. Anything that saves my time in the kitchen will get a “10/10, will buy again”.
  • Creamy. With 78% coconut, it is still creamy and fragrant.
  • Convenient. Once opened, it needs to be refrigerated and used within 4 weeks. I keep leftovers in the freezer for future use.

Making aubergine curry

Right, let’s not rave about coconut cream in the whole post shall we. It’s very straightforward; fry aubergines and remove, fry the spices, then add chopped tomatoes and coconut milk. Simmer, and done. If you’re using Blue Dragon coconut cream block, simply chuck a 100 g block along with 400 ml of water into the pan.

I love this simple curry for the fact that its ready in 30 minutes. I love it with rice, but when I can’t be bothered to make them, I just warm up some nice crusty bread instead and dip it into this creamy curry. Quite blissful.

Ingredients

  • 600 g aubergines, cubed
  • 4 tbsp olive oil
  • 2 onions, finely sliced
  • 1 tsp garam masala
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 400 ml chopped tomatoes 1 can
  • 2 small chilis
  • 400 ml coconut milk (see note 1) (see note 1)
  • chopped parsley for serving

Instructions

  • Heat 2 tablespoons of oil on medium heat. Add aubergine and fry until dark golden and soft. Remove from pan.
  • Heat another 2 tablespoons of oil on medium heat. Add onions and fry for 1 minute until translucent.
  • Stir in garlic and all the spices. Stir for 2 minutes until the spices release their aroma.
  • Tip in the tomatoes, coconut milk and aubergines. Simmer gently for 10 minutes, covered.
  • Remove lid and continue to simmer for 5 minutes to thicken the sauce.
  • Taste and season with salt if needed. Stir in the coriander.
  • Sprinkle a little chopped parsley and serve over bread, rice or with chapatis.

Notes

  1. If you’re using Blue Dragon coconut cream block, add a 100 g block along with 400 ml of water into the pan instead. No prior dilution is needed.
