A savoury twist to a wonderfully British snack. Buttery, and bursting with flavour, these scones are so easy to make, it will make you forget all the store-bought ones!
Their solid appearance might deceive you. These scones have a dreamy lightness that’ll make you pat yourself in the back. The tender crumbs are wonderfully paired with a flavourful cheddar crust. A tiny skosh of cayenne, mustard and black pepper adds just enough flavour, perfect for cold, crispy mornings, just out of the oven.

Let me tell you what got me converted from a jam and cream scones into cheddar scones.
My adoration for scones has me experimented with berries, chocolates, and sausages over the years. My savoury scones were decent but not great. And I know now it’s because I have never tried making them with spices!
So here’s the story. We took refuge from a chilly, morning drizzle in a cafe. We’d give our right arms for a piping bowl of soup. Apparently it was the magic hour, as the waitress casually mentioned that the cheddar scones are just out of the oven. I was mind-blown. It’s buttery, tender, flavourful. I knew I had to make one just like it, but with visibly more cheddar and just a tad of coarse black pepper.
So here we are, after a couple of trials, my best cheddar scones recipe! This recipe has a brilliantly sticky dough. Traditional scones have a drier, solid mass of a dough, but this recipe uses more milk to produce the lightest and fluffiest texture once baked.
I quite enjoy the occasional subtle heat I get from the coarse black pepper. If that isn’t your thing, you can leave it out of the recipe. Granted, there is one thing that everyone take pleasure from; the scones’ golden hue.
Making cheddar scones
Mix together flour, baking powder and salt in a big bowl. Quickly rub together chilled butter with your hands, until they look like tiny cornflakes.
Add cheddar and all the spices. Stir until just combined. Make a well in the middle of the bowl.
Crack the egg and pour milk. Bring dough together.
The dough will be a little sticky.
Scrape dough onto a floured, clean surface.
Shape it into a log and cut it into half.
Cut each half into four smaller ones. Shape the dough balls and place them on baking trays.
Brush with generous amount of milk and leftover grated cheddar.

Cheddar Scones
Ingredients
- 250 g self raising flour (2 cups)
- 60 g chilled unsalted butter, cubed (¼ cup)
- 2 tsp baking powder
- 1/2 tsp salt
- ¼ tsp cayenne pepper
- 1½ tsp mustard powder
- ¼ tsp coarse black pepper
- 100 g mature cheddar, finely grated, plus 50g grated for sprinkling on top (1½ cup)
- 120 ml milk (½ cup)
- 1 egg, large
Instructions
- Preheat the oven to 180°C (356°F). Line the baking tray with baking paper.
- Mix flour, baking powder and salt. Add butter and quickly rub it together with your hands until it resembles tiny cornflakes.
- Mix in grated cheddar and all the spices and stir well. Make a well in the middle of your bowl.
- Crack the egg and pour milk into the well. Bring the sticky dough together.
- Scrape dough onto a clean, well floured surface. Shape it into a log, cut it in half, then divide each half into 4.
- Shape each dough into a ball and flatten them. Place them on the lined baking tray. Brush with milk and sprinkle the rest of the cheddar. Bake in the oven for 10 to 15minutes or until golden.
- Serve on its own or with butter.
