This is my go to vegan cake for my vegan friends. This moist vanilla cake has a tender crumb and pairs handsomely with the chocolate frosting.
It’s so easy and quick, you don’t even need a mixer to make the cake. Cutting the cake into layers is effortless as the cake holds together well.
Anatomy of a vegan cake and frosting
Vegan desserts can be dry. But it doesn’t have to. This vanilla cake is tender, moist and most of all, holds well when layering.
Can I turn this into a chocolate vegan cake?
Absolutely, and really easy too. Swap out half a cup (or 60 grams) of all purpose flour with cocoa powder. The oil in the recipe keeps the cake moist in addition to the vegan milk.
A final thought: Whisk the cake batter, don’t use a mixer
To maintain a tender crumb, simply use a whisk to mix everything together. They mix together really easily. Using a hand mixer will whip too much air into the cake batter, resulting in cakes with huge air pockets once baked!

Vegan Vanilla Cake with Chocolate Frosting
Equipment
- 2 7-inch round cake pans
Ingredients
Vegan vanilla cake
- 1 ¾ cups all purpose flour (220 g)
- 1 cup white granulated sugar (200 g)
- 1 tsp baking soda
- ½ tsp Salt
- 1 cup non-dairy milk eg. soy milk, almond milk, etc (240 ml)
- 2 tsp vanilla extract
- ⅓ cup Vegetable oil or any other flavorless oil eg. canola, sunflower, soybean etc (80 ml)
- 1 tbsp distilled white vinegar or apple cider vinegar
Vegan chocolate frosting
- 1 cup cup unsalted vegan butter or margerine, room temperature (if you're using salted, skip adding the salt)
- 2 tsp vanilla extract
- pinch of salt
- 4 cups icing sugar (additional ½ cup to adjust to your desired sweetness and consistency)
- ⅔ cup vegan milk plus 2-3 tablespoon extra to reach desired consistency
Instructions
Make your vanilla cake
- Line your 7 inch baking pans with baking sheets.
- In a mixing bowl, sift the flour, baking soda and salt. Add the sugar mix together.
- In a measuring cup, mix vegan milk, vinegar, vanilla, and oil. Pour it into the flour mixture and whisk until just combined.
- Divide the batter evenly between your two lined cake pans.
- Bake for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
- Cool cake in the pans for a couple minutes before transferring them to a cooling rack to cool completely.
Make your chocolate frosting
- Add the vegan butter into a large mixing bowl. Sift the cocoa powder and icing sugar. Add the vanilla extract, salt and half the vegan milk to the bowl.
- Start mixing it together at slow speed, gradually increasing speed until it’s smooth.
- Add the rest of your vegan milk and mix until smooth. Taste and add icing sugar and/or milk until desired consistency is desired.
